Primal Lamb Neck
Primal Lamb Neck is a fabulously underrated cut of lamb. It is a tough cut that requires very long, slow cooking. It may look as though the neck doesn't contain much meat, but yields a surprisingly generous amount once every scrap is tender. Stew or braise until tender.
