Wild Black Cod (Butter fish) Filets
Black cod, which also goes under the names butterfish and sablefish, is a rich white-flesh fish with a moist, succulent texture. It does well grilled, smoked, broiled, poached, roasted, or slow-cooked in a confit. It's high fatty content makes it forgiving to the novice cook. Our Black cod is skin on and also has pin bones.

although the quality of the product is excellent, this fish is a very soft/mushy fish and we didn't care for it.
