HOW TO MAKE HAM
Ham requires curing (a quick rub with salt & spices, then let it sit in the refrigerator for a few days) then smoking (a simple bbq and a few hours will do). When you do the work yourself, you can choose and source ingredients you're comfortable with, so you have full confidence about the lunch meat you're giving your kids or the holiday ham you're serving to impress your in-laws.

HOW TO MAKE PORK ROAST
Pastured pork leg has a bold dark meat flavor (think the difference between chicken leg and breast). We've found it's best to slow roast with spices, and then serve shredded. The bold flavor really holds up well with Cuban flavors!

ABOUT OUR PORK
All of our pork comes from our ranch or California Kurubota in Hollister, CA. They are raised free range, outside, and given no antibiotics or hormones. They eat a natural omnivore diet of local and seasonal fruits, nuts, vegetables, and certified organic, soy/GMO free grains. Absolutely zero antibiotics, hormones, vaccines or drugs.
