Hey Friends, Farmer Paul here.  When I thought about learning to make tamales, I had just one person in mind.  I reached out to Claudette Zepeda-Wilkins of El Jardin restaurant in San Diego, hands down the most talented true-Mexican food chef I've ever known.  The conversation went something like this - "Hey Claudette, want to do a tamales workshop on the farm?"  She replied - "abso****inglutely yes".  That's Claudette for you.  So here you go:

Whether you had a tamale game or not already, it's time to elevate my friends.  Come out to the farm on Monday night (what else do you possibly have going on that's cooler?) and get your hands covered in fresh masa made with real pasture raised pork lard and bone broth, the old fashioned way.  Learn how to make real-deal authentic Mexican tamales with heritage non-gmo imported Mexican corn.  And be ready to laugh, because Chef Claudette is absolutely hilarious.

About the Chef

Chef Claudette Zepeda-Wilkins comes to Primal Pastures from El Jardin Restaurant in San Diego, which is proudly re-defining what San Diego diners think of as Mexican regional cuisine.  It's insane you guys.  She imports a huge portion of her ingredients from small farmers in Mexico and they have a legit urban farm on site at the restaurant in Liberty Station.  Oh, and they serve our Pasturebird chicken.  You must go.  She was also a former Top Chef contestant, and a generally hilarious, genuine, and authentic person that you will adore.
