Our Ham Hocks are fresh and uncured. They are an unassuming piece of pork that, cooked correctly, adds a rich and meaty flavor to the dish. With minimal meat on the ham hock, it is typically used to enhance the flavors of soups, stocks/broth and beans and then removed.

Ham Hocks are also known as pork knuckles, because it is the bottom part of the pork leg. It consist of mainly bone, collagen and connective tissue making it a tough product, so it is ideal to cook it low and slow in order to optimize the full flavor profile. When cooked low and slow in a variation of liquid, the collagen and fat will dissolve and infuse into the liquid, giving you a nutritionally dense soup or stock.

*The skin has been removed from the ham hock. 

All of our pork products come from Clear Creek Farms in Spalding, Nebraska. They are pasture raised and given no antibiotics or hormones.  They eat a natural omnivore diet of certified organic local and seasonal fruits, nuts, vegetables, soy free, GMO free grains and barley that has been soaked and sprouted in whey. This is by far the best hog available.

Delicious and easy-to-make Ham Hock

I simply covered with water and seasoned with salt and peppercorns, then brought to a simmer and covered for 3 1/2 hours. This produced a rich and tasty gut-healing broth, which I ate with the truly delicious meat. This was a very satisfying, healing meal and very easy to make.

Melt In Your Mouth Deliciousness

I’m obsessed with these ham hocks. They are seriously melt-in-your-mouth tender, juicy, + delicious! I made a ham hock + pinto bean stew for the rainy weather this week, topped with a scoop of homemade cultured cream, and it’s absolute bliss. Thanks Primal Pastures crew!
