Chicken Thighs - Imperfect Cuts

How to Use Imperfect Cuts

How to Cook or Break Down Bone-In, Spine-On Chicken Thighs

These thighs come with the spine attached: not a problem, just a little different. Here’s how to work with them:

Cook As-Is
The extra bone actually adds flavor! Just season, sear skin-side down to crisp, then roast or braise low and slow until juicy and tender. The spine releases rich collagen and minerals, making your dish even more nutrient-dense.

Break It Down Before Cooking
✓ Place the thigh skin-side down on a cutting board.
✓ Use kitchen shears or a sharp knife to cut along both sides of the spine.
✓ Remove the spine and set it aside for broth.
✓ That’s it, you’re left with a standard bone-in thigh.

Bonus Tip:
Save those spines! Toss them in a freezer bag and collect over time. Once you’ve got a few, you’ve got the makings of a deeply flavorful pastured chicken bone broth.

FAQ's

When will my order ship?

Nationwide shipping is available Monday- Wednesday. Any orders placed after 10:00am PST on Wednesday will be processed and shipped the following week.

CA, AZ, NV, TX, ID, CO, UT, NM, OR, WA, and WY: Shipping is available Monday-Friday and is free on orders over $200. Any orders placed after 10:00am PST on Friday will be processed and shipped the following week.

Do you ship with dry ice?

All orders with meat or cold items are packed in boxes with recyclable insulated liners, as well as dry ice.  We calculate the dry ice needs for each individual address to ensure you receive your meat perfectly frozen.

It is very common for the dry ice in your package to have dissipated by the time it arrives to you. As long as the meat is still cold to the touch, the products have not been compromised.
