The Petite Tender is also known as the shoulder tender or teres major. It's cut from the shoulder, not the loin, so it costs less than tenderloin, yet it's the second-most tender cut on the animal, right after the tenderloin itself. It's lean, mild in flavor, and fine grained. For best results, cook it quick and hot: sear, grill, or pan-fry, then let it rest.
All orders ship frozen with dry ice and insulated packaging to arrive in perfect condition. We ship Monday–Wednesday to avoid weekend delays. Orders placed after Wednesday will ship the following week.
Our beef meets a standard 99% of farms can't. 100% grass-fed and grass-finished, California beef. Corn-free. Soy-free. No antibiotics, no hormones, no steroids. Raised on regenerative pasture, the way cattle were meant to live.

Healthy animals raised the right way don't need pharmaceutical interventions. Our cattle are never given antibiotics, hormones, or steroids — not once, not ever. Because that's what "clean" actually means.

Our cattle graze on land free from chemical fertilizers, herbicides, and pesticides. Healthy soil grows healthy grass. Healthy grass raises healthy beef. We believe less inputs = better outputs.
