Sablefish, but more commonly known as Black Cod, is a white-flesh fish, known for its velvety, rich and buttery flavor - which is how it earned the nickname, “butter fish”. Its rich oil content make this fish the highest valued fin-fish per pound in Alaska and the West Coast and is most commonly shipped overseas or sought out locally by high-end restaurants.
It does well grilled, smoked, broiled, poached, roasted, slow-cooked or confit. It's high fatty content (Omega-3s) makes it forgiving to the novice cook.
