Whole Cow

Customization: You’ll work directly with the butcher to choose your cuts—from juicy steaks to tender roasts and ground beef.

About our Beef Program

Our Whole, Half, and Quarter Beef Program lets you fill your freezer with premium, grass-fed, grass-finished beef that’s raised with care for top-notch quality. By purchasing in bulk, you’ll save money compared to buying individual cuts while enjoying the freshest, most flavorful beef possible.

Our beef comes from a Hereford/Angus cross, raised right on the beautiful Central Coast of California. These cows roam freely across 18,000 acres of open land, where they graze on lush, nutrient-rich grass and forage in a natural, stress-free environment. This ensures that our beef is not only delicious but also ethically and sustainably raised.

After our cattle are raised on the land, they are carefully processed at Sinton and Sons Butchery in Paso Robles, CA, known for their high standards and expert craftsmanship. The beef is then aged to perfection, ensuring each cut is tender, flavorful, and ready to be enjoyed in your home.

How the Program Works

  1. Select Your Beef Program
    Choose from Whole, Half, or Quarter Cow options based on your household’s needs and budget. We’ll help you figure out exactly how much beef you’ll need.

  2. Place Your Order
    Once you have chosen your Whole, Half, or Quarter Cow, contact us to place your order. A deposit will be required to secure your spot in the program. We’ll confirm pricing and the next steps once your order is placed. The entire process from slaughter to delivery typically takes 35-40 days, but timing may vary.

  3. Standard Cut Sheet
    With the Quarter Cow option, the cuts are made according to our standard cut sheet, which includes a variety of steaks (ribeye, sirloin), roasts (chuck, round, brisket), and ground beef. If you choose the Whole or Half Cow, you’ll work with the butcher to customize your cuts to your preferences.

  4. Processing & Butchering
    Once the cow is processed, your beef will be carefully packaged and labeled according to your selections. We’ll notify you when your order is ready for pickup or delivery.

  5. Pickup or Local Delivery Available
    For our Southern California customers, you have the option to pick up your beef directly from our farm or pay for local delivery within 150 miles* of our farm in Murrieta.

  6. Additional Customizations
    If you’d like burger patties or sausage made from your beef, Sinton and Sons is happy to provide that service for an extra cost. These items are not included in the standard processing and butchering fees and will be added to your final invoice.

  • Whole Cow

    About 400-500 lbs of meat, or 300-350 meals

  • Half Cow

BEEF SHARE FAQs

What is hanging weight?

Hanging weight refers to the weight of the cow after slaughter, once the hide, head, hooves, and internal organs are removed. The final weight of your beef after butchering may differ, but we base our pricing on the hanging weight for consistency.

How long does the entire process take?

The entire process from slaughter to delivery typically takes 35-40 days. We schedule slaughter dates every month, and it’s recommended by the butcher that you age your beef for 28 days to maximize flavor and tenderness, though you have the option to choose a shorter aging time if you prefer.

What cuts will I receive?

For the Quarter Cow, cuts are made according to our standard cut sheet. This typically includes steaks (ribeye, sirloin), roasts (chuck, round, brisket), and ground beef. For Whole or Half Cow purchases, you’ll get to customize your cuts with the butcher.

How much freezer space do I need?

Whole Cow: 12-15 cubic feet

Half Cow: 7-8 cubic feet

Quarter Cow: 4-5 cubic feet

Can I get organ meats and other cuts like bones, suet, and tongue?

Yes, you’ll be able to get a variety of organ meats and other parts, including liver, heart, kidney, tongue, bones, and suet. These are available at no extra charge, but you must request them when placing your order.

What is the final weight I'll receive?

Typically, the final weight of the beef you receive will be about 60% to 65% of the hanging weight. This accounts for the weight lost during processing, such as trimming and bones removed.

Can I pick my cuts with a quarter cow?

Customization is only available with the Whole and Half Cow programs. The Quarter Cow will be based on our standard cut sheet.
