How Beef Share Pricing Works

Your share includes every cut from your portion of the animal, premium steaks and everyday staples, averaged into one price per pound.

Ribeye, filet, NY strip, short ribs, and brisket often retail for $25–$40/lb individually. In a beef share, those cuts are balanced with roasts, bones, and ground beef, giving you better overall value and a more complete freezer.

BEEF SHARE FAQs

What is hanging weight?

Hanging weight refers to the weight of the cow after slaughter, once the hide, head, hooves, and internal organs are removed. We base our pricing on the hanging weight for consistency.

What does “pasture-raised” mean?

When we say pasture-raised, we mean cattle that are raised outdoors on open pasture, with continuous access to grass and fresh air, not confined in feedlots or indoor barns.

Our cattle:

Live on pasture year-round
Are free to graze, move, and express natural behaviors
Are never confined to feedlots
Are finished on grass, not grain

It’s important to know that “pasture-raised” is often used loosely in the marketplace. Some operations use the term even when animals spend limited time outdoors or are finished in confinement.

What is GAP level 4 animal welfare certification?

GAP stands for Global Animal Partnership, one of the most rigorous and widely respected third-party animal welfare certification programs in the U.S.

GAP Level 4 means:

  • Animals are raised entirely outdoors
  • Continuous access to pasture
  • No confinement or feedlots
  • Higher welfare handling standards throughout the animal’s life
  • Independent, third-party audits

Is this beef aged?

Yes, we age our beef for 14 days.

How long does the entire process take?

The entire process from slaughter to delivery typically takes 35-40 days. We schedule slaughter dates every month, and it’s recommended by the butcher that you age your beef for 14 days to maximize flavor and tenderness.

What cuts will I receive?

For the Quarter Cow, cuts are made according to our standard cut sheet. See above for the full list.

How is the beef packaged?

We process and butcher the beef into smaller cuts, roasts, steaks and ground and each item is individually packaged and labeled.

How much freezer space do I need?

Whole Cow: 15-20 cubic feet

Half Cow: 7-10 cubic feet

Quarter Cow: 4-6 cubic feet

Can I get organ meats and other cuts like bones, suet, and tongue?

Marrow Bones, Soup Bones and Liver are included in the quarter share. Heart, Tongue and other specialty cuts are only available for whole and half shares upon request.

What is the refund policy?

All payments are non-refundable. It’s important to understand that by reserving your share of our herd your deposit is used to plan the buying, raising, and processing of your cow for you. We appreciate your understanding of this and advise that shares can be transferred to another person if needed. Thank you for trusting us to raise your beef.

Our Whole, Half, and Quarter Beef Program lets you fill your freezer with premium, grass-fed, grass-finished beef that’s raised with care for top-notch quality. By purchasing in bulk, you’ll save money compared to buying individual cuts while enjoying the freshest, most flavorful beef possible.

Our beef comes from a Hereford/Angus cross, raised right on the beautiful Central Coast of California. These cows roam freely across 18,000 acres of open land, where they graze on lush, nutrient-rich grass and forage in a natural, stress-free environment. This ensures that our beef is not only delicious but also ethically and sustainably raised.

After our cattle are raised on the land, they are carefully processed at Sinton and Sons Butchery in Paso Robles, CA, known for their high standards and expert craftsmanship. The beef is then aged to perfection, ensuring each cut is tender, flavorful, and ready to be enjoyed in your home.
