Our Half Beef Share includes 211 lbs of individually wrapped cuts, processed in California from a single animal raised on open pasture by our farm partner, Sinton & Sons, in Paso Robles, CA.
Each share is grass-fed, grass-finished, GAP Step 4 certified, and processed by a USDA-inspected butcher. You receive a balanced mix of premium steaks, everyday cooking cuts, bones, and ground beef vacuum-sealed.

Ribeye, filet, NY strip, short ribs, and brisket often retail for $25–$40/lb individually. In a beef share, those cuts are balanced with roasts, bones, and ground beef, giving you better overall value and a more complete freezer.
Hanging weight refers to the weight of the cow after slaughter, once the hide, head, hooves, and internal organs are removed. We base our pricing on the hanging weight for consistency.
When we say pasture-raised, we mean cattle that are raised outdoors on open pasture, with continuous access to grass and fresh air, not confined in feedlots or indoor barns.

It’s important to know that “pasture-raised” is often used loosely in the marketplace. Some operations use the term even when animals spend limited time outdoors or are finished in confinement.

Yes, we age our beef for 14 days.
The entire process from slaughter to delivery typically takes 35-40 days. We schedule slaughter dates every month, and it’s recommended by the butcher that you age your beef for 14 days to maximize flavor and tenderness.
For the Quarter Cow, cuts are made according to our standard cut sheet. See above for the full list.
We process and butcher the beef into smaller cuts, roasts, steaks and ground and each item is individually packaged and labeled.
Whole Cow: 15-20 cubic feet
Half Cow: 7-10 cubic feet
Quarter Cow: 4-6 cubic feet
Marrow Bones, Soup Bones and Liver are included in the quarter share. Heart, Tongue and other specialty cuts are only available for whole and half shares upon request.
All payments are non-refundable. It’s important to understand that by reserving your share of our herd your deposit is used to plan the buying, raising, and processing of your cow for you. We appreciate your understanding of this and advise that shares can be transferred to another person if needed. Thank you for trusting us to raise your beef.
