Wild Vermillion Red Snapper
Once again we were able to get our hands on a rare catch!! Captain Brian Blair from the Ultra Pacific has a limited entry hook and line special permit to fish off the coast of California for Vermillion Rock Fish. Folks this is not a fish you will find at your local market.
Vermillion Red Rock Fish has a phenomenal moisture that translates to a rich and succulent texture. The raw light pink flesh cooks to a brilliant paper white. The Red Rock Fish has a blank slate canvas that accepts many applications. The light flavor is a perfect vehicle for fresh herbs, fruits, and vegetables. Light butter sauces, vinaigrettes, and purees are perfect for this delicacy.
Preferred cooking methods: Sauteed, Broil, Ceviche, and Sous Vide.

The fish is firm and lightly flavored which means to me how fresh it is! Thank you!!
Easy to bake in a toaster oven with a little olive oil and herb seasoning......YUM....
